Parmesan chicken nuggets
A tasty recipe for the kids. Serves four people.
Ingredients:
4 chicken fillets
cooking spray
½ cup bread crumbs
¼ cup parmesan cheese
Pinch salt & pepper
1 teaspoon dried herbs (Italian style)
egg, lightly beaten
Directions:
Gently pound chicken fillets to a thickness of about ¼ - ½ inch thick (for easier cooking). Cut chicken fillets in bite size pieces. Mix breadcrumbs, spices, parmesan together in bowl. Beat egg. Dip chicken pieces in egg, then bread crumbs, lightly coating each piece. Place on lightly greased or sprayed baking trays. Spray the top of the chicken lightly. Place in preheated 355°F oven for about 40 min, turning after about 25 minutes. Check to see these are cooked through. Serve with good quality tomato sauce for dipping.
