Chicken parmesan with egg plant



Ingredients:

6 boneless chicken breasts halves
½ egg plant
1 egg
10oz/ 300g jar of Italian pizza sauce
Italian seasoning
1 Bay leaf
1 cup of shredded Mozzarella cheese
1 cup of dry bread crumbs
4 oz/ 100 g of butter
Vegetable oil spray
Grated Parmesan cheese
Salt and pepper to taste

Method:
Beat the egg in a bowl with salt, pepper and Italian seasoning. Dip the chicken breasts in the egg then lightly coat them with bread crumbs. Sauté the chicken breasts in the butter until they are golden brown. Spray the bottom of the crock pot with vegetable oil. Slice the egg plant. Place the slices on the bottom of the crock pot so that they will cook through. Add the chicken and the sauce. Cook on low for 6 – 8 hours.

Add the Mozzarella and sprinkle with grated Parmesan cheese. Cook for a further 10-15 minutes. Serve with rice or pasta.
