Chicken parmesan
An easy to prepare chicken parmesan recipe cooked in a skillet or frying pan.
Ingredients:
4 skinned chicken breast fillets
1 egg, lightly beaten
½ cup seasoned breadcrumbs (mixed herbs or Italian herbs)
2 tablespoons butter or margarine
1 ¾ cup pasta/ tomato sauce
½ cup shredded mozzarella cheese
2 tablespoon freshly grated Parmesan cheese
¼ cup chopped fresh parsley
Directions:
Place chicken fillets between two sheets of plastic wrap; flatten to ¼ inch thickness, using a meat mallet or rolling pin. Dip chicken in egg, and dip in breadcrumbs.
Melt butter in large skillet or frypan, cook chicken over medium-high heat until browned on both sides. Spoon pasta/tomato sauce over chicken; gently bring to a boil. Cover, reduce heat, and simmer for approximately 10 minutes.
Sprinkle with cheeses; cover and simmer five additional minutes or until cheeses melt. Serve with chopped parsley.
