Chicken parmesan for two
This recipe serves two people. However, the ingredients can be doubled to prepare a family serving.
Ingredients:
2 chicken breast fillets or thighs)
½ tablespoon Italian herb seasoning
Breadcrumbs
¼ cup grated parmesan cheese
1 egg
Olive oil or vegetable oil
7 oz/ 200g mozzarella cheese
Fresh tomato or tomato sauce
Directions:
Flatten chicken to about ¼ – ½ of an inch thick. In a bowl, combine bread crumbs, Parmesan cheese and Italian seasoning. In another bowl, beat the egg. Dip chicken into egg, then coat with seasoned breadcrumb mixture. Gently press the crumbs onto chicken. Preheat a frying pan or skillet with about ½ cup of olive oil or vegetable oil. Add more if necessary. Lightly brown the chicken on medium heat until juices run clear. Drain on greaseproof paper. Add either a slice of freshly sliced tomato or good quality tomato/ bolognaise sauce. Top with mozzarella cheese (grated or slice), place under griller to lightly melt cheese. Serve with fresh bread, mashed potato, salad etc.
